Weigh the bottle, not the spoon. Put the oil bottle on the scale before you cook and again when you are done. The difference is what left the bottle, and at 884 calories per 100 grams that difference is what to log.
Every culinary oil is the same 884, because the bottle is essentially pure fat and nothing else. Switching oils changes many things; it does not change this number.
The question nobody answers
Search for calories in cooking oil and you will get the same answer everywhere: about 120 in a tablespoon. It is 13.5 g at 884 per 100 g, so 119 to be exact — that is our own arithmetic, not a lookup — and it is almost useless, because nobody eats a tablespoon of oil. You pour some into a pan, some of it lands on the food, some of it stays behind, and the part that matters is the part that reached your plate.
That gap between the pour and the plate is where the calories go missing. A diary can be scrupulous about the chicken and the rice and still be badly short by the end of the day, because the oil was never an entry at all.
In a pot nothing is left behind, so you can total the ingredients and weigh the finished dish — that is the finished-weight method for a pot of soup or stew. In a pan, some of the fat never leaves the pan, and that is why this page is different.
This page is about closing that gap with a scale rather than a lookup table — and about being honest where the measurement runs out, which it does sooner than most articles admit.
Why every cooking oil is the same number
A bottle of cooking oil is fat and essentially nothing else. No protein, no carbohydrate, no water worth counting. So its calorie content is not really a measurement at all — it is arithmetic on one ingredient.
The multiplier is where it gets interesting. The familiar 9 calories per gram of fat is a general figure. For food composition work, USDA uses factors specific to the food group, and for fats and oils the factor is 8.84 calories per gram, slightly under the familiar 9 because 9 is a rounded average across all fats. Where 884 comes from
This is why olive, canola, sunflower, avocado, peanut and “light” olive oil all carry the same calories. “Light” on an olive oil bottle refers to the color and the flavor, not to the energy. There is no lower-calorie cooking oil, and any page implying otherwise is selling something.
Three pieces of US law that decide what you can see
The oil is not hidden by anyone's bad faith. It is hidden by three ordinary pieces of US regulation, each perfectly sensible on its own.
1. Anything under five calories can be printed as zero
Federal labeling rules allow a serving with fewer than five calories to be declared as zero, and require rounding in five-calorie steps up to fifty and ten-calorie steps above that.
This is the entire explanation for cooking spray. The oil in the can is ordinary oil at 884 calories per 100 grams. The declared serving is a very short burst — short enough to fall under five calories, which may be printed as zero. Check the can in your cupboard; the serving is printed on it. Hold the button for three seconds across a large pan and you have added real calories, every one of them legally invisible.
What to do about it. Treat spray as oil. If you use it lightly, the error is genuinely small. If you use it the way most people actually use it — a generous coating — put the can on the scale before and after, exactly as you would a bottle.
2. Some foods have a legal minimum fat content — which makes them calculable
Two of the densest things in an American kitchen have their composition fixed by law, which means their calorie floor can be calculated rather than looked up.

Butter is defined in federal law as containing not less than 80 percent by weight of milk fat — a definition set by Congress in 1923 and unchanged since. Mayonnaise must contain not less than 65 percent by weight of vegetable oil; a product below that line is legally not mayonnaise and is sold as “dressing” instead.
The practical consequence is worth stating plainly: a tub that is meaningfully lower in calories is not 80% milk fat, and the label has to say so on the front — “light butter”, “reduced fat” or “spread”. Whichever word it uses, it is a different product from the 703-and-up floor above, so read its own panel rather than assuming butter's number.
3. The serving size does the rest
A dressing bottle looks harmless because the panel describes a small serving, and almost nobody pours a small serving. This is not a rounding trick, just a mismatch between a standardised reference portion and a real hand over a real salad. The fix is the same as everywhere else on this page: weigh the bottle.
Weigh the bottle, not the spoon
Measuring spoons are the wrong instrument for oil. A tablespoon of oil is about 13.5 grams if it is level, and nobody levels oil — it is poured in a stream while the pan heats. The error is not small: pour for one extra second and you have added more than most people's afternoon snack.
- Put the bottle on the scale and note the weight. Cap on, before you start.
- Cook. Pour as you normally would; the point is to measure your habits, not to change them.
- Weigh the bottle again. The difference is grams of oil that left the bottle.
- Multiply. Grams ÷ 100 × 884 = calories. Divide by the number of portions the dish made.
Do it once, not forever. Two or three dinners is enough to learn what your own pour actually weighs. Most people are surprised the first time and roughly right by the fourth. After that you can estimate honestly, which is the real goal.

What stayed in the pan
The bottle tells you what you poured. It does not tell you what you ate, and the difference is the one genuinely unresolved quantity on this page.
You can measure part of it. When the pan comes off the heat, tip it and pour whatever pools out into a spoon on the scale. If the pan was otherwise dry — a shallow-fried vegetable, an oiled pan with nothing wet in it — that is oil which never reached the plate, and you can subtract it. If you cooked meat, do not: most of what pools out of a meat pan is juice and water, and taking all of it off the oil line removes calories you did eat. Either way, what you cannot recover is the film left on the metal and the oil that went up as smoke — both real, both small, neither worth an evening of arithmetic.
The reference table
For the things that go on food after it is cooked, where a bottle-weighing is impractical. Treat these as the generic entry for the category, not as your product: between-brand variation is the dominant term for anything with a name on the label.

The empty cells in that table are deliberate. We could fill them with a number copied from somewhere, and it would look more authoritative and be less true. For a jarred pesto or a bottled ranch, the label on the thing in your hand is the only figure that means anything.
Why there is no percentage to multiply by
“How much oil does food absorb when you fry it?” is the obvious next question, and it deserves a straight answer: not in a form that helps you.
The published work on frying almost always reports composition — how much fat is in 100 grams of the finished food. That is a different quantity from transfer, which is how much of the oil you poured ended up on your dinner. Composition includes the food's own fat and the fat in any batter. Two studies can look contradictory purely because one measured a fraction of the food and the other a fraction of the pan.
We could not reach the primary literature from here, and the secondary summaries of it disagree with each other, so this page names no study and quotes no percentage. What follows is reasoning rather than reportage. More oil, in contact with more surface, for longer, moves more oil: battered, breaded and porous foods have far more surface than dense ones, deep frying keeps the food in oil the entire time, and a filmed non-stick pan barely touches it. Roasting is the closest to total, because nothing is poured off a tray and oil does not evaporate — counting calories in a tray bake handles it as an ordinary ingredient.
None of that gives you a percentage to multiply by, which is precisely the argument for the scale. Weighing the bottle sidesteps the entire literature, because it measures your pan, your oil and your dinner instead of somebody's laboratory.
Three habits that remove most of the error
- Weigh the bottle for a week. Not forever — just long enough to learn what your own pour weighs. Most people are out by a factor of two before they check.
- Log the oil as its own line. Folded into “chicken and vegetables” it is invisible and gets rounded away. On its own line it is a number you can see and argue with.
- If you have no scale at all, oil is still the first thing to get right — estimating without one explains why it beats being careful about the vegetables.
- Dress the salad on the scale. Put the bowl on, zero it, pour. It takes three seconds and it is where the largest single-item errors in a food diary live.
